There’s something truly magical about the smell of a cake fresh out of the oven. Honestly, it beats any perfume! Today, I’m sharing a cake recipe that’s not just delicious, but gluten-free, sugar-free, and incredibly satisfying. Once you try it, you’ll want to bake it again and again.

During the short winter days, our homebody instincts take over — a cozy evening with a movie, or a quiet night alone, and this cake becomes the perfect companion.

It’s simple, comforting, and surprisingly healthy. Perfect for winter afternoons, tea breaks, or even breakfast with a cup of your favorite herbal tea.

Ingredıents and Step-by-Step Instructıons

Step 1 – Fruıt & Nut Mıxture

Ingredients:

  • 1 apple and 1 carrot (combined weight about 180 g)

  • 15 g butter (1 tablespoon)

  • 1 teaspoon cinnamon

  • ½ teaspoon allspice

  • 4–5 walnuts

Instructions:

  1. Grate the apple and carrot.

  2. Melt the butter in a pan over medium heat.

  3. Add the grated fruits and spices to the melted butter. Cook until the fruits release their juices and begin to caramelize.

  4. Chop the walnuts roughly and add them to the mixture. Cook for another 2–3 minutes, then remove from heat and let cool.

Step 2 – Cake Base

Ingredients:

  • 50 g dried mulberries (about 1 cup)

  • 2 eggs

  • 100 g butter (room temperature)

  • 100 ml milk

  • 2 cups rolled oats

  • 1 packet baking powder

Instructions:

  1. Blend the dried mulberries into a fine powder.

  2. Beat the eggs for 3 minutes, then add the milk and continue beating for another 3 minutes.

  3. Add the rolled oats, baking powder, and butter. Mix thoroughly until all ingredients are well combined.

Step 3 – Combıne and Bake

  1. Fold the fruit and walnut mixture from Step 1 into the cake batter using a spatula.

  2. Pour the mixture into a cake or muffin pan.

  3. Bake at 180°C (350°F) for 35–40 minutes. Baking time may vary depending on your oven and the size of your pan.

Tip: Test with a toothpick in the center — if it comes out clean, your cake is ready!
